Since the last time I used this recipe, which was quite a few years ago, it has never failed to meet my expectations. In fact, it has never failed to exceed them. Because we have a vegetable garden and we always end up with an excessive amount of tomatoes, I usually cook it during the summer months. This is because we always end up with an abundance of tomatoes. I am the one who is responsible for making it because of this.

After that, I prepare it in enormous quantities so that I may put it away in the freezer for the duration of the winter that we are experiencing. Not only do I use a significant amount of garlic in this recipe, but I do so not just because my family and I are enormous fans of garlic, but also because the roasting process improves the flavor of the garlic. I use a substantial number of garlic in this dish.

Occasionally, the seeds were extracted from the sauce by passing it through a strainer in order to eliminate them. This action was taken in order to get rid of the seeds there. On the other hand, when it comes to tomato seeds, the vast majority of people do not experience any problems.

  • 2lbs large tomatoes
  • 4garlic cloves, minced
  • 1teaspoon dried Italian herb seasoning
  • 12teaspoon sugar
  • 1teaspoon salt
  • 12teaspoon black pepper
  • 2tablespoons olive oil

DIRECTIONS

  • Preheat the oven 400°f.
  • Slice tomatoes in half, set aside.
  • Pour the olive oil onto a large baking sheet and spread it around the sheet.
  • Sprinkle evenly the garlic, herbs, sugar, salt and pepper over the oil.
  • Place the tomatoes cut side down onto the baking sheet.
  • Roast for about 30-40 minutes, or until the skins start to lift from the tomatoes.
  • Allow to cool.
  • Remove the skins and put the sauce into a large bowl and break up the flesh with a fork.
  • Reheat sauce if using immediately.
